Besides being delicious, it was quick, easy, and cheap!
2 cups of cooked shredded chicken (use rotisserie for convenience or next time you're making chicken, save a little extra to make this the next day!)
1/2 cup red onion, chopped
1/2 avocado, mashed
2 cloves of garlic, minced
1 cup of panko or breadcrumbs
1 egg, beaten
1/4 tsp cumin
1/4 tsp dried oregano
1/4 tsp paprika
1/2 tsp salt
1 1/2 tbs olive oil
5 tbs of prepared salsa
*Due to not reading directions carefully, I accidentally skipped this part. They still turned out amazing so I think you could skip it and save yourself a little bit of time and extra work*
1. In a small frying pan, heat 1/2 tbs olive oil over med-high heat. Saute onion for about 5-7 min until soft, add garlic and saute for 1 more minute.
2. In a medium bowl, mix avocado, chicken, 1/3 cup of panko, cumin, paprika, oregano, salt, onion, garlic, and egg. Stir to combine.
3. Shape into 5 patties, about 1/2 inch thick and lightly coat with remaining panko.
4. Heat remaining olive oil in a non-stick skillet and add cakes. Cook about 2 minutes on each side. Top with salsa and serve. Enjoyyyy!
