1 can of black beans, rinsed and drained
1/2 cup of whole wheat flour (I used white because I had just run out of WW.)
1 tsp cumin
1/2 tsp paprika
1/2 tsp salt
2 tbs olive oil
1 cup of your favorite guacamole. (We made ours from scratch: 3 avocados, 1 and 1/2 diced roma tomatoes, 1 tbs shallot, salt to taste, and 1 lime, juiced.)
Preheat oven to 350 and spray a 24 cup mini-muffin tray with cooking spray.
In a food processor or blender, combine beans, flour, cumin, paprika, salt, and olive oil. Blend until dough starts to form.
Place dough into cups and spread dough up the sides to form mini cups. Bake for 20 minutes. Let cool and fill with guacamole!
