I'm starting to realize that sweet potatoes and black beans might be a favorite of mine (and especially combined). Maybe I should start posting recipes with more variety but I can't not share this one. :)
1 large sweet potato, diced
1 large onion, chopped
4 cloves garlic, minced
2.5 cups of water
2 Tbs of chili powder (I ran out so I used a mix of cayenne pepper and some adobo)
4 tsp ground cumin
1/2 tsp ground chipotle pepper (I used canned and minced it)
1/4 tsp salt
2 cans of black beans
1 can of diced tomatoes
1 lime, juiced
1/2 cup cilantro, chopped.
Heat olive oil in a large pot and add sweet potato and onion, stir often. Cook about 4 minutes or until onion is soft. Add garlic, chili powder, cumin, and chipotle and stir for 30 seconds. Add water and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
Add beans, tomatoes, and lime juice. Bring to a simmer again and cook for another 5 minutes. Remove from heat and stir in cilantro.
