Wednesday I headed down to Long Beach Island with my friend Christina to attend a very special wedding. I had an amazing time, the ceremony was beautiful, the food at the reception was awesome, and we danced most of the night away. We got down there really early yesterday morning and spent the morning and afternoon at the beach before it was time to check in and get ready for the big night.
I bought a dress that was a little different than anything I usually wear. Normally I'd go for something flowy and not form fitting, but I decided to try something different and go for a more grown up look. I was nervous I would feel self conscious but I actually felt great. It's all about feeling good in your own skin and embracing who you are. Something I work on daily is not letting my inner critic get the best of me. We all have that little voice inside of us that tells us we aren't good enough, not thin enough, not pretty enough, not smart enough, not funny enough...it can be pretty exhausting when that is all we let ourselves hear. Self love is so important, I think it's key to having successful friendships, relationships, careers, and happiness in life. How can we expect anyone else to love us if we don't love ourselves? So celebrate who you are and silence that inner critic! Next time you hear it just tell it to shut the eff up! :P
Christina is my best friend and cheerleader in life. She is always there to support me and tell me how special I am. Everyone should have a friend like her and I only hope that I am as good to her as she is to me!
These 3 girls I've known practically my whole life! Our personalitites are as different as they come but obviously that has worked in our favor. Twenty some years later and we are still in each others lives.

This recipe has quickly become a staple at my house. I make it almost once a week for dinner and then we eat leftovers for lunch, it's simple, quick, and delicious! I found this original recipe on Lemons and Loafters, one of my favorite blogs and also a fellow health coach! I changed it up a bit (mostly because I'm lazy) but here is my version
1 package of spicy buffalo chicken sausage
1 bunch of kale (or buy the prewashed, precut kind-much easier!)
2 cups of instant brown rice
1-2 tbs of Cajun seasoning (more or less depending on how spicy you like it)
3 cups of chicken broth
Preheat oven to 425
Boil chicken broth in a large pot and add kale, boil for about 10-15 minutes.
Cook rice according to package.
In a non-stick skillet cook sausage until browned and cooked through.
When everything is finished cooking, add sausage and rice into the pot of kale and stir. Add the cajun seasoning to taste.
, our jambalaya into an oven safe dish and bake for 15 minutes.
I meant to post this Wednesday but I completely forgot and since my days were all mixed up this week (I woke up thinking yesterday was Friday. It's always a bummer when you realize it's not) I'll post it today.
