1 package of spicy buffalo chicken sausage
1 bunch of kale (or buy the prewashed, precut kind-much easier!)
2 cups of instant brown rice
1-2 tbs of Cajun seasoning (more or less depending on how spicy you like it)
3 cups of chicken broth
Preheat oven to 425
Boil chicken broth in a large pot and add kale, boil for about 10-15 minutes.
Cook rice according to package.
In a non-stick skillet cook sausage until browned and cooked through.
When everything is finished cooking, add sausage and rice into the pot of kale and stir. Add the cajun seasoning to taste.
